When one part of a foundation settles more than an adjacent part, the wall between the two is put under a twisting, shearing stress rather than simple downward pressure. Concrete and masonry resist that stress until they can't, and the crack that results travels diagonally, following the direction of least resistance through the material rather than straight down.
The material a wall is built from changes how the diagonal crack looks. In poured concrete, the crack tends to travel in a relatively smooth, straight diagonal line, since there's no mortar joint to redirect it. In brick or block walls, the same underlying force typically produces a stair step pattern instead, the crack following the weaker mortar joints in a jagged, stepped diagonal rather than a clean line.
